Selection and Storage
Choose roots with smooth, firm, and unblemished skin, should be clean white and bright—avoid yellowing or dull patches. Store whole, unwashed daikon in the vegetable crisper drawer of the refrigerator and keep in a plastic bag or wrapped in paper towel to prevent moisture loss.
